Dairy farm Dikhoeve
Just outside Amsterdam, amidst the vast meadows of Waterland, Dikhoeve Farm has been raising dairy cattle for almost 300 years. From the milk they have been making cheese and yoghurt for many generations.
Raising dairy cattle and crafting cheese is deeply woven into their DNA. From milking to cheese making, everything happens on this farm. They do so with great love for the craft, nature and the sheep and cows that provide their most important ingredient - milk.
Making cheese from full, creamy sheep's milk is unique in the Netherlands. Extra special is that Zuivelboerderij Dikhoeve makes soft cheeses that are still truly handmade in the traditional manner. Moreover, all these products are organic. This means that they give nature as much space as possible and do not use artificial fertilisers or chemical pesticides, that their animals graze on unsprayed meadows all summer long and that all ingredients are (SKAL) certified.

Cheesemakers Willem and Laura master the art of cheese making to perfection and know exactly when the cheese is at its best. Because for the taste of cheese, not only the artisanal preparation on the farm is important, but also the refining: the ripening of the cheese. And that is pure science: only at exactly the right temperature and humidity does cheese develop its perfect flavour.
